One of my favorite tricks to make recipes lighter is to substitute cauliflower rice for regular rice. While I love traditional rice, sometimes I would rather add a ton of toppings like avocado and cheese and leave off the rice. 

I typically just use rice as a base for whatever I am serving and since it isn't the star of the show, I have no trouble swapping in some tasty cauliflower rice

Today I’m sharing an Easy Taco Cauliflower Rice Skillet, which comes together in under 30 minutes and is bursting with delicious Mexican flavor. This recipe was a big hit when I served it to my family recently and is perfect for Taco Tuesday or any day you are craving Mexican, which is basically every day for me.

I like to serve this tasty rice with a variety of tasty toppings including sour cream, salsa, avocado, tortilla chips, and spicy bean dip. I also like how versatile this rice skillet can be. You can substitute any type of ground meat you like, add beans, use it as a stuffing for burritos, and spice it up as you prefer.

This Easy Taco Cauliflower Rice Skillet satisfied my craving for Mexican food and left me feeling full and energized (instead of sleepy like a typical carb-heavy Mexican dish does). I hope your family will enjoy this flavorful dish as much as mine does!

Ingredients

US METRICS
  • 1 pound 93% lean ground turkey
  • 1 oz. taco seasoning (or chili powder to taste)
  • 4 cups cauliflower florets, finely chopped (fresh or frozen, or prepared cauliflower rice)
  • 1 cup salsa (of your choice)
  • 1/2 cup water (or broth)

Use a food processor or grater to make your cauliflower rice, or use prepackaged cauliflower rice.

Heat a nonstick skillet over medium heat. Spray a nonstick skillet with cooking spray. Add the turkey and cook until browned and cooked through, breaking it up as it cooks. Add the taco seasoning and cauliflower. Stir until well combined. Add the salsa and water and stir again and then cover the pan and cook 5 minutes, stirring occasionally, until the cauliflower is cooked to your liking. Serve with your favorite toppings.
